VALOR NUTRICIONAL DEL Grillus peruviensis (Orthoptera: Grillidae).

El consumo de insectos puede proporcionar una importante fuente de proteínas en la dieta humana, y por lo tanto puede representar una importante fuente de alimentos sin explotar para reducir la deficiencia nutricional. La contribución potencial de la dieta de Gryllus peruviensis (Orthopera: Grillidae) ha sido evaluado y se ha encontrado que son: proteína 66.9, fibra cruda 13.0, extracto etéreo 8.1, cenizas 2.8 y ELN Extracto libre de nitrógeno 9,2%. La digestibilidad en pepsina fue de 81,8%. Se concluye que este insecto representa una fuente de proteína de alta digestibilidad.Downloads
